This year Almeria has been named gastronomic capital of Spain and we want to celebrate it in Sydney by introducing the Spanish cuisine to the Australian community and, more specifically, Almeria in the framework of a series of two events, including a seminar on Tapas frías. During the seminar, the Spanish chef David Sorroche will explain what is the process of making cold tapas to be able to inform the local public about the ingredients and production processes and assembly necessary to prepare cold tapas.

The seminar will explain in detail and step by step the whole process to bring the world of the Spanish tapa closer to the interested Australian public.

About David Sorroche: Born in Almería on February 3, 1979. His whole life has lived between stoves from the family business, going through the hospitality studios, he perfected his knowledge with different chefs in Almería. In 2002 he settled in Hamburg, Germany. There he had the opportunity to put into practice all his knowledge, taking over for four years, as head chef, the restaurant "Altamira". Local reference in the gastronomic landscape of northern Germany, especially for its creative cuisine tapas. David was able to develop his more artistic side, inventing new tapas, always with a solid base of Spanish, Andalusian and Almerian cuisine. The respect he achieved gave him the opportunity to cook for demanding artists such as David Bowie or Robbie Williams, during his musical tours throughout Europe. For several years he has taken up residence in Almería. Taking care of the kitchen of several restaurants, ("La Tasquilla de Rodalquilar", "Macla"). He continues to bet on his most creative side, without neglecting his continuous learning, such as the specialization course in Thai cuisine held at the prestigious Baipei School in Bangkok Thailand 2007. Currently, he develops his experience and knowledge as Chef at La Joya of the exclusive Real de Aguamarga. His professional work is complemented by his dedication as a teacher of various cooking courses and he collaborates with seed multinationals such as Syngenta and Bayern, making Showcookings and creating culinary creations for their catalogs.
