Chorizo in Paella? Tex-Mex? How dare you! Instituto Cervantes

In this session of the conversation club, we will debate authenticity in Hispanic gastronomy. We will discuss whether it is appropriate to add non-traditional ingredients, such as chorizo in paella, and how this may affect the cultural identity of the dishes. The phenomenon of Tex-Mex food and its relationship to authentic Mexican cuisine will also be addressed. Participants will reflect on the evolution of gastronomy and the impact of globalization. Opinions will be shared on culinary innovation versus respect for traditional recipes. The goal is to foster an open conversation about what defines a cuisine as “authentic”. In addition, we will exchange personal experiences of fused or adapted foods. The workshop will seek to promote cultural understanding through food.
