Sherry & the Mystery of Palo Cortado

A glass of sherry goes way beyond the mere fermentation of fruit. Sherry brings with it the taste of a place to which graced by divine favour. Jerez, in the south of Spain, where wine has been produced for 3,000 years, is a place steeped in history, legends and, more than anything, its own sense of mystery. Figuring prominently among Jerez’s many mysteries is the magical wine which is el Palo Cortado.
